Two Helpings of Dairy Free Ratatouille Please

This is what happens when you are preparing Allergy safe food for a neighbor and your family gets jealous. Two batches of stewed chicken in tomato sauce and dairy free ratatouille with all the vegetables you can find in the store for slicing. A very safe fun with food weekend in our home.

I came up with this recipe when our kids were watching the movie by the same name a few years ago.  Everyone loves it in our house and we hope you will too.

Ratatouille:

24 oz of your favorite tomato sauce

2 packages of silken tofu

Three or 4 of each type of vegetable large enough for slicing, including but not limited to zucchini, garnet sweet potatoes, orange sweet potatoes, white sweet potatoes, carrots, eggplant, parsnips, yellow squash

Slice the vegetables in thin circles

whisk together the tofu and sauce

Cover the bottom of a 9x13 pan with sauce mixture

layer each type of vegetable in a single layer until you have used one of each type of vegetable

add another layer of the sauce mixture

alternate the vegetable layers and the sauce layer until the pan is full.

Cover on with aluminum foil and bake at 375 degrees for 1 hour.

Stewed Chicken in Tomato Sauce:

As the name suggests this is a two ingredient, one pot meal. 2 pound of chicken and 16 oz of your favorite sauce.  Cover pot.  Cook on medium to low heat for 40 minutes.  Make sure meat is fully cooked.  Depending on your stove, you may need to cook longer.
